Scallops and micro greens with citrus vinaigrette Owner/Chef Tobias Lawry of Restaurant 821 on the Market Street Mall in Historical Downtown Wilmington begins to prepare this dish by sourcing out impeccably fresh Day-boat scallops. The scallops are then roasted on cast iron in a brick wood-burning oven until their natural sugars have caramelized introducing a wonderful sweetness. Micro greens delivered from a nearby farm are dressed with a citrus vinaigrette made by squeezing perfectly ripened oranges then reducing the juice and folding in a Spanish Virgin Olive oil.
