Owner/Chef Jay Totman of the State Street Grille in Kennett Square grills his southwestern salmon with Cajun spices – paprika, cumin, garlic and mexican oregano – and serves it atop black bean salsa and cumin cilantro creme fraiche and steamed rice. Combine the salmon with one of Jay’s flavorful starters like Wild Mushroom and Ricotta Stuffed Rigatoni in a Rosa Sauce with Balsamic Syrup Drizzle, a favorite of ours, and a delectable dessert, and you have a wonderful dining experience.
